North Coventry Elementary School is ‘Cookin’

Mark Birdsall from Triskeles and Yvonne and Denise from Cooking For Real visited NORCO  in the evening of October 20th to check on the delicious salad greens which have been moved into the kindergarten rooms in their Earth Boxes and to do some healthy cooking with a group of parents and students and staff.

Squash pancakes were the order of the evening, touched up with a little pumpkin butter. ‘Really?’ you say.  Yes, really.

Following the recipe which called for 1/2 cup of cooked squash for each recipe was easy. The dry ingredients were shaken together in a quart mason jar, then the liquid ingredients added and ‘Shake, shake, shake’ sang Ms. Yvonne as everything was mixed by the kids.

Then we cooked them up on the griddle, garnished with the pumpkin butter, and MMMMMM, good.

Parents and students got the recipies for these and other healthy treats.

Meanwhile, the students are still snacking daily on the fresh organic greens growing right in their classroom.
