‘Mr. Mark’ and ‘Ms. Yvonne’ from Triskeles’ Food For Thought program and Cooking For Real made the trek to Germantown on a warm October 21st evening, phighting hordes of Phillies Phans who were headed for the big game. But we got to the Germantown Hope Community Church only a bit late, and the 14 teens of the GHCC youth group and youth pastor Raj Lewis were waiting with several adult volunteers.
This was our first time with this group, but after brief introductions, we got right down to cooking. Or–the youth did. Following the recipe provided and a few verbal instructions, they quickly re-made whole wheat flour, sugar (a little), salt, baking powder, eggs, milk and BUTTERNUT SQUASH in to delicious pancake batter.
Then the youth with the steadies hands took over, flipping the pancakes precisely on the hot griddle. Served on a napkin and annointed with a little pumpkin butter, these were delicious snacks–and healthy as well.
